Ahhhh…Town Topic’s famous Truckstop Omelet. A 4 egg, 6 cheese, meat, onion and hashbrown pile of gooey goodness. Invented by former TT cook Flo, who worked the night shift on her own back in the 1970s when Baltimore was open 24/7. When she’d get too busy, Flo would just throw a bunch of food on the grill, cook it up in her own amazing way, and tell the customers, “This is what I’m makin’, and this is what you’re eatin’.” And eat it, they did! Back then truck drivers used to park their rigs all around the restaurant – hence the name, “Truckstop”.
